Grilled Beef Tenderloin With Chilean Cilantro Sauce
Ingredients
Cooking spray of your choice (aisle # 8)
4 cups sliced yellow onions (produce department)
½ teaspoon granulated sugar (aisle # 8)
1 ½ pounds center cut beef tenderloin (service meat department)
½ teaspoon salt (aisle # 8)
½ teaspoon garlic powder (spice rack end of aisle #8)
½ teaspoon dried oregano (spice rack end of aisle #8)
½ teaspoon black pepper (spice rack end of aisle #8)
1/4 teaspoon ground cumin spice (spice rack end of aisle #8)
"Chilean Cilantro Sauce" (see recipe below)
Heavy duty plastic wrap (aisle # 9)
"Chilean Cilantro Sauce" Recipe
Ingredients:
2/3 cup College Inn vegetable broth (aisle # 6)
½ cup minced fresh cilantro (produce department)
½ cup minced fresh yellow onions (produce department)
½ cup minced red bell pepper (produce department)
1/4 cup white vinegar (aisle # 6)
1 teaspoon salt (aisle # 8)
1 teaspoon dried oregano (spice rack end of aisle # 8)
1 teaspoon crushed red pepper (spice rack end of aisle # 8)
½ teaspoon black pepper (spice rack end of aisle # 8)
4 garlic cloves minced (produce department)
Directions
Combine all ingredients, stirring with a whisk until well blended. Yields about 2 cups, serving size is about 1 tablespoon. You can store refrigerated in aan airtight container for up to two weeks.


Directions
 
1. Place a large skillet coated with cooking spray over medium high heat until hot. Add sliced onions, sugar; cover and cook for 10 minutes or until golden brown. Stir frequently. Keep warm.
2. Prepare broiler.
3. Cut tenderloin lengthwise with the grain into six even steaks. Place 1 steak between 2 sheets of heavy duty plastic wrap, flatten to an even thickness using a meat mallet or a rolling pin. Repeat for remaining steaks.
4. Combine salt and next four ingredients (salt through cumin). Rub salt mixture over both sides of steaks. Place steaks on broiler pan coated with cooking spray.
5. Broil 2 minutes on each side or until desired degree of doneness.
6. Top each steak with onion mixture and drizzle each with 1 tablespoon of "Chilean Cilantro Sauce"
