Certified Angus Beef Rib Roast
With Blue Cheese & Cherry Sauce

Ingredients
    Ingredients:
  • 1 bone in beef rib roast, about 5 to 7 pounds.
  • 4 Tbsp olive oil for basting.
  • Salt and pepper.
  • 1 Tbsp peeled and diced shallots.
  • 3 oz dried cherries.
  • 1 cup white cooking wine or white wine.
  • 1 pkg D'Artagnan 7.5 oz fully prepared demi-glace sauce.
  • 1 Tbsp butter.
  • 2 tsp Buttermilk Blue brand crumbled blue cheese.


Directions
 
  1. Preheat oven to 450 degrees.
  2. Rub roast with basting oil, salt and pepper. Place in roasting pan. Place on center rack of oven and cook 15 minutes.
  3. Reduce oven temperature to 350 degrees; roast beef to desired doneness, about 20 min per lb., see chart below.
  4. Check by inserting digital thermometer into thickest part of meat without touching bone.
  5. Remove from oven when done and allow to rest for 20 minutes.
  6. As roast rests, make Blue Cheese & Cherry Sauce.
  7. To make sauce place roasting pan with drippings on stovetop on medium heat.
  8. Add shallots. Cook 1 minute and stir in cherries. Add wine, stirring to loosen browned bits on bottom of pan.
  9. Simmer 8-10 min to reduce liquid to almost dry. Add demi-glace sauce and bring back to simmer. Simmer 2 min.
  10. Add butter and cheese; melt and whisk into sauce.

Final Beef Temperatures:


Rare: Very red, warm center 125 to 130 degrees.
Medium: Pink, warm center 135 to 140 degrees.
Well: Pink, very warm center 140 to 145 degrees and above.
