Braised Oriental Style
Beef Short Ribs With
White Rice & Green Onions

Ingredients
  • Cooking spray of your choice
  • 4 pounds boneless beef short ribs, trimmed and cut into 8 equal pieces
  • 2 tablespoons minced peeled fresh ginger
  • 1 tablespoon grated orange rind
  • 4 garlic cloves, minced
  • 1/2 cup dry cooking sherry
  • 2 cups sliced shiitake mushrooms,about 3 1/2 ounces
  • 3/4 cup fat-free, less-sodium beef broth
  • 6 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1/4 teaspoon crushed red pepper
  • 1 can, 8 ounces sliced bamboo shoots, drained
  • 1 cinnamon stick, 4 inch size
  • 1 can diced water chestnuts, 8 ounces, drained
  • 4 cups hot cooked short-grain white rice
  • 1 cup (1-inch) slices green onions


Directions
 
  1. Heat a large Dutch pan oven over medium-high heat. Coat pan with cooking spray.
  2. Add half of beef to pan; cook 3 minutes, browning on all sides. Remove beef from pan. Repeat procedure with cooking spray and remaining beef.
  3. Add ginger, rind, and garlic to pan and sauté 30 seconds or until fragrant.
  4. Stir in sherry, scraping pan to loosen browned bits. Add mushrooms; cook 3 minutes or until tender, stirring frequently.
  5. Add beef, broth, and next 5 ingredients, through cinnamon and bring to a simmer.
  6. Cover, reduce heat and simmer for 2 1/2 hours or until beef is very tender.
  7. Stir in water chestnuts and cook for 5 minutes. Discard cinnamon.
  8. Serve over white rice and sprinkle with green onions.

Final Beef Temperatures:


Rare: Very red, warm center 125 to 130 degrees.
Medium: Pink, warm center 135 to 140 degrees.
Well: Pink, very warm center 140 to 145 degrees and above.
