Grilled Beef & Chicken Fajitas With Peppers & Onions
Ingredients
- 1 bottle World Harbor's fajita style marinade
- 1 pound flank steak
- 1 pound boneless & skinless chicken breast
- 2 red bell peppers, cut into 12 wedges and seeded
- 2 green bell peppers, cut into 12 wedges and seeded
- 1 large Vidalia sweet onion skinned & cut into 16 wedges
- Cooking spray of your choice
- 16 six inch fat free flour tortillas
- 1 cup bottled Pinder's salsa, medium or hot
- 1/4 cup lo fat sour cream
- ½ cup chopped fresh cilantro
- Fresh cilantro sprigs
Directions

1. Marinade chicken, beef in marinade according to bottle directions.
2. Marinade vegetables separately according to bottle directions
3. Prepare grill.
4. Remove chicken and steak from marinade, discard un used marinade.
5. Remove marinated vegetables from mixture and place un used marinade in a small sauce
pan and set aside.
6. Place steak, chicken and vegetables on grill rack coated with cooking spray, cook 8
minutes on each side or until desired degree of doneness.
7. Wrap tortillas tightly in foil, place tortilla packet on grill rack the last 2 minutes of grilling
time. Bring reserved marinade to a boil in saucepan.
8. Remove steak and chicken and cut diagonally across the grain into thin slices. Place the
steak, chicken and vegetables on a serving platter, drizzle with reserved marinade.
9. Arrange about 1 ounce of steak, I ounce of chicken, 3 pepper wedges and I onion wedge
in a tortilla. Top with I tablespoon of salsa, I teaspoon of sour cream, Vi teaspoon of
chopped cilantro. Fold sides of tortilla over filling. Garnish with cilantro sprigs if desired.
