Grilled Portabello Burgers
Ingredients
1/4 cup extra virgin olive oil (aisle # 11 )
2 tablespoons balsamic vinegar (aisle # 6 )
4 Portabella mushroom caps, stems trimmed even with caps (produce department)
2 red bell peppers, trimmed, seeded and halved lengthwise (produce department)
1 sweet large Vidalia onion, cut 4 thin round slices, refrigerate leftovers. (produce department )
1/3 cup feta cheese ( food court cheese or dairy department )
4 large hamburger rolls, split in half ( food court, bakery department)
Directions

1. Stir together oil and vinegar in a small bowl. Brush peppers on both sides with mixture. Spoon remaining mixture over mushroom "gills" or underside.
2. Grill peppers over medium coals until lightly charred on both sides and tender, (move to outside of grill to keep warm while grilling mushrooms).
3. Grill mushrooms over hot coals, gill-sides up, 3 to 4 minutes (should be tender but still hold their shape and retain their juices).
4. Place a mushroom, gill side up, on the bottom half of each role, top with cheese, 1 slice o onion, an one pepper half. Put the lid on each one and cut in half, Sandwich style.
