Spinach & Goat Cheese On Focaccia Bread
Ingredients
2 teaspoons olive oil (aisle #11)
4 cups vertically sliced yellow or Bermuda onions (produce department)
1 tablespoon red wine vinegar (aisle # 6)
1/4 teaspoon black pepper (spice rack end of aisle #11)
6 cups loosely packed fresh spinach leaves, stemmed and washed (produce department)
1/2 cup, 2 ounces crumbled goat or feta cheese(food court cheese case)
2 - 2 ounce pieces of our store baked focaccia bread, cut in half horizontally and toasted(our store bakery department)


Directions
 
1. Heat the oil in a large non stick skillet over medium high heat. Add onion and cook 5 minutes, stirring occasionally. Continue cooking 12 minutes or until golden brown, stirring constantly. Remove from pan.
2. Add spinach to skillet; cook 1 minute or until spinach wilts, stir in vinegar and pepperRemove from heat.
3. Divide cheese evenly between bottom halves of focaccia bread. Top each half with 1/2 cup of onion mixture, 1/3 cup spinach, and top halves of focaccia.
4. Serve immediately.
