Spinach & Mushroom Pinwheels
Ingredients
  • 3 Tbsp olive oil (aisle # 8)
  • 1 pkg (8 oz) sliced mushrooms(produce department)
  • 4 cloves garlic, minced (produce department)
  • 2 pkg 16 oz fresh pizza dough, remove from fridge ½ hour before preparation (pasta bar aisle # 7)
  • 3/4 pkg , about 8 oz fresh spinach, stemmed, coarsely chopped and patted dry (produce department)
  • 8 oz part-skim shredded mozzarella cheese (dairy department)
  • 2 Tbsp chopped fresh oregano, or 1 Tbsp dried (spice rack end of aisle #8 or produce department)
  • Cooking spray of your choice (aisle # 8)


Directions
 
  1. Preheat oven to 350 degrees.
  2. Heat 1 Tbsp oil in a skillet and sauté mushrooms on MEDIUM 3-4 min. Add garlic and cook 1 min.
  3. Lightly flour work surface. Using a rolling pin or your hands, roll or flatten dough to a rectangle, approx 12" x 16".
  4. Top with sauteed mushrooms and garlic, chopped spinach, cheese and oregano. Drizzle with remaining oil and season with salt and pepper.
  5. Roll up jelly-roll style, as tightly as possible. Pinch the edges and fold under to seal.
  6. Place seam down on a large cookie sheet that''s been lightly coated with cooking spray.
  7. Bake 45 min or until outside is browned and crisp. Let stand for 10 min before slicing crosswise in ½ to ¾-inch pieces.
