Brie Cheese, Caramelized Onions
And Apricot Bread Bowl Appetizer

Ingredients
  • 1 Tbsp. butter
  • 1 medium sweet onion, sliced, about 1 cup
  • 1 tsp. sugar
  • 1 freshly baked Ecce Panis Rustico bread loaf
  • Il'De France or brand of your choice 8 ounce "double creme style" brie cheese
  • 4 Tbsp. apricot preserves
Directions
 
  1. Preheat oven to 350 degrees.
  2. In a medium skillet melt butter over medium heat.
  3. Add sliced onions and sugar. Cook 5 to 7 minutes, stirring occasionally, until onions have carmelized. Set aside.
  4. Slice the top off the Rustico bread loaf and remove the top and save for a lid when baking. Hollow out enough of the bread to fit your piece of brie cheese into. Do not add the brie cheese at this time.
  5. Spread apricot preserves insidide the hollowed out bread loaf and on the bottom of the bread lid.e
  6. Add half the onions to the bread bowl, top with brie cheese and then add the remaining onions.
  7. Replace the bread top - lid and bake for 15 to 18 minutes.
  8. Cut into wedges to serve warm or at room temperature.
