 Black Bean Burgers With
 Spicy Cucumber And Red Pepper Relish

 Ingredients
 
 Relish
  • 2/3 cup finely chopped peeled cucumber
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup finely chopped red onion
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon finely chopped dill
  • 1/8 teaspoon salt
  • Dash of ground red pepper
Burgers
  • 1 (15-ounce) can black beans,
    rinsed and drained
  • 1/2 cup dry breadcrumbs
  • 1/4 cup minced red onion
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon black pepper
  • 1 large egg
  • cooking spray of your choice
  • 1/4 cup light mayonnaise
  • 4 hamburger buns - rolls, about 1.5 ounces each
  • herb dill sprigs
 Directions

 
 
  1. To prepare relish, combine first 8 ingredients in a medium bowl. Cover and chill 2 hours.

  2. To prepare burgers, place beans in a large bowl and partially mash with a fork. Stir in breadcrumbs and next 5 ingredients, which are breadcrumbs through egg.
  3. Divide bean mixture into 4 equal portions, shaping each into a 1/2-inch-thick patties. Place the patties in wax paper to make them easier to transport to the grill.
  4. Prepare grill.
  5. Place patties on grill rack coated with cooking spray and grill 5 minutes on each side or until thoroughly heated.
  6. Spread 1 tablespoon mayonnaise on the bottom half of each bun - roll and top each with a patty, 1/4 cup relish the top half of bun - roll.
  7. Garnish with dill sprigs, if desired.
  8. Combine first 6 ingredients in a large zip-top plastic bag. Add mushroom caps and seal and marinate in refrigerator for 24 hours.
  9. Prepare grill or broiler.
  10. Remove mushroom caps from bag and discard marinade. Place mushroom caps on grill rack or broiler pan coated with cooking spray and cook 5 minutes or until tender.
  11. Heat the oil in a medium nonstick skillet over medium-high heat. Add the onion and cover and cook 10 minutes or until golden brown, stirring frequently.
  12. Combine mayonnaise and roasted garlic in a small bowl. Spread 1/2 tablespoon mayonnaise mixture evenly over the top halves of buns - rolls. Top each bottom half of bun with 1 lettuce leaf, 1 tomato slice, 1 mushroom cap, 1 tablespoon caramelized onion. Top with other half of bun - roll.
