Lightening Fast Antipasto Lasagna
Ingredients
1 jar your favorite mushroom or garlic pasta sauce(aisle #7)
3 tablespoons all purpose flour(aisle # 11)
1 14 ounce can drained Progresso artichoke hearts in brine, coarsely chopped (aisle # 7)
1 7 ounce Mancini or Scalfani red roasted peppers, drained and chopped(aisle #11)
½ cup chopped pepperoni of your choice (deli of meat department)
Cooking spray of your choice (aisle #11)
6 no boil Ronzoni lasagna noodles (aisle # 7)
1/3 cup kalamata pitted olives(aisle #6)
1 cup, about 4 ounces shredded part skim mozzarella cheese(dairy department)
fresh oregano sprigs, optional (produce department)
Directions

1. Preheat oven to 450 degrees.
2. Spread ½ cup of pasta sauce in bottom of an 8" square baking dish coated with cooking spray.
Arrange 2 noodles over sauce; top with half of artichokes, half of roasted peppers, 1/4 cup
pepperoni and half of olives. Sprinkle with ½ cup cheese top with 3/4 cup sauce. Repeat layers,
OMITTING CHEESE, ending with noodles. Spread remaining sauce over noodles.
3. Cover and bake at 450 degrees for 30 minutes or until noodles are tender and sauce is bubbly.
Uncover and top with ½ cup cheese, bake an additional 5 minutes. Let stand 5 minutes and
garnish with optional oregano sprigs if desired and serve.
