Cranberry Glazed Pork Tenderloin
Ingredients
1 cup fresh cranberries (produce department)
1 cup coarsely chopped and peeled granny smith apple (produce department)
2/3 dark brown baking sugar (aisle #11)
1/2 cup water
1/4 freshly chopped yellow onion
1 tablespoon freshly minced peeled ginger,
powdered ginger can be substituted(both in our produce department)
1 teaspoon curry powder (spice rack and of aisle # 11)
1/8 teaspoon ground red pepper,
not crushed but ground (spice rack end of aisle #11)
1/4 teaspoon salt (aisle #11)
1/4 teaspoon black pepper (spice rack end of aisle #11)
cooking spray of your choice (aisle # 11)
2 "3/4 pound" pork tenderloins, fat trimmed by our meat department and a pop up thermometer inserted by our meat department(service meat department)


Directions
 
1. Preheat oven to 350 degrees.
2. Combine first eight ingredients in a small saucepan and bring to a boil. Cover, reduce heat and simmer 20 minutes. uncover and simmer 2 more minutes or until thick. Cool 10 minutes. Place in a blender or food processor and process until smooth. Divide cranberry sauce in half.
3. Sprinkle pork with salt and pepper. Brush pork with half of cranberry sauce. Place pork on a broiler pan coated with cooking spray and bake at 350 degrees for 30 minutes. Internal temperature should be 160 or higher. Thermometer should pop after the 30 minute period.
4. Serve pork with remaining cranberry sauce. each serving is approximately 3 ounces of pork.
