Roasted Pork With Apples, Cabbage And Turnips
Ingredients
- Cooking spray of your choice (aisle #6)
- One (3-pound) boneless pork loin roast, trimmed (service meat & seafood)
- 2 cups finely chopped yellow onion (produce department)
- 1 slice smoked bacon, chopped(service meat & seafood)
- 5 cups thinly sliced and peeled tart apples - about 1.5 pounds (produce department)
- 3 cups thinly sliced green cabbage (produce department)
- 3 cups cubed peeled turnips, 1 inch cubes (produce department)
- 1/4 cup dry white cooking wine (aisle # 6)
- 2 tablespoons real maple syrup (aisle # 8)
- 2 tablespoons cider vinegar (aisle # 6)
- 1 teaspoon salt (aisle # 8)
- 1/4 teaspoon freshly ground
black pepper (aisle # 8)
Directions

- Preheat oven to 375 degrees
- Heat a large Dutch oven over medium high heat. Coat dutch oven pan with cooking spray. Add pork and cook 15 minutes, browning on all sides.
- Remove pork from the pan. Add onion and bacon to pan and saute for 5 minutes or until onion is tender.
- Return pork to pan. Add apple and remaining ingredients, and bring to a simmer.
- Place pan in oven. Bake uncovered at 375 degrees for I hour and 15 minutes or until thermometer registers 155 degrees. Turn pork after 45 minutes.
