Roasted Pork With Apples,
Cabbage And Turnips
Ingredients
  • Cooking spray of your choice (aisle #6)
  • One (3-pound) boneless pork loin roast, trimmed (service meat & seafood)
  • 2 cups finely chopped yellow onion (produce department)
  • 1 slice smoked bacon, chopped(service meat & seafood)
  • 5 cups thinly sliced and peeled tart apples - about 1.5 pounds (produce department)
  • 3 cups thinly sliced green cabbage (produce department)
  • 3 cups cubed peeled turnips, 1 inch cubes (produce department)
  • 1/4 cup dry white cooking wine (aisle # 6)
  • 2 tablespoons real maple syrup (aisle # 8)
  • 2 tablespoons cider vinegar (aisle # 6)
  • 1 teaspoon salt (aisle # 8)
  • 1/4 teaspoon freshly ground
    black pepper (aisle # 8)

Directions
 
  1. Preheat oven to 375 degrees
  2. Heat a large Dutch oven over medium high heat. Coat dutch oven pan with cooking spray. Add pork and cook 15 minutes, browning on all sides.
  3. Remove pork from the pan. Add onion and bacon to pan and saute for 5 minutes or until onion is tender.
  4. Return pork to pan. Add apple and remaining ingredients, and bring to a simmer.
  5. Place pan in oven. Bake uncovered at 375 degrees for I hour and 15 minutes or until thermometer registers 155 degrees. Turn pork after 45 minutes.
