Pork, Fresh Green Beans And Cashew Stir-Fry
Ingredients
1/4 low sodium Kikkoman soy sauce (aisle #8)
2 teaspoons cornstarch (aisle # 11)
1 pound pork tenderloin, cut in to 1/4 inch thick slices (service meat department)
4 cups fresh green beans,stemmed and washed (produce department)
2 teaspoons dark Hokan sesame oil (aisle #8)
Cooking spray, non flavored of your choice (aisle #11)
1 to 2 tablespoons minced. peeled fresh ginger (produce department)
2 garlic cloves minced (produce department)
1/4 cup less sodium College inn chicken broth (aisle #6)
2 cups hot, white cooked rice of your choice (aisle #8)
1/4 cup chopped cashews, toasted (aisle #4)


Directions
 
1. Combine the soy sauce and cornstarch in a medium bowl, add pork, stirring to coat. Cover and chill
2. Place beans into a large saucepan of boiling water and cook 5 minutes. Drain beans and plunge into cold ice water. Drain.
3. Heat sesame oil in a large skillet coated with cooking spray over medium high heat. Add ginger and garlic, saute for 1 minute. Add pork mixture, stir fry 1 1/2 minutes. Stir in green beans; stir fry 1 1/2 minutes or until pork is done.
4. Stir in broth, reduce heat and simmer for 2 minutes.
5. Serve over rice and sprinkle with cashews.
