Dinner Party Spiral Cut
Marsala Glazed Ham


This ham could be the perfect centerpiece for a large dinner party. It will feed a crowd but you wil stikk have plenty of leftovers for sandwiches. Garnish final platter with fresh herbs and citrus cuts such as fresh quartered oranges.


Ingredients
  • 1 1/4 cups Marsala Cooking Wine or Sweet Marsala or Madeira Wine
  • 1/2 cup packed brown sugar
  • 1 tablespoon ground coriander spice
  • 1/2 teaspoon ground allspice spice
  • 1 - 10 pound bone-in, spiral cut, smoked, fully cooked ham half
  • 20 whole cloves
  • Cooking spray of your choice

Directions
 
  1. Combine first 4 ingredients in a small saucepan; bring to a boil.
  2. Reduce heat, and simmer until Marsala mixture is reduced to 2/3 cup, about 8 minutes. Remove from heat.
  3. Trim fat and rind from ham. Score outside of ham in a diamond pattern; stud with cloves. Place ham on a broiler pan coated with cooking spray.
  4. Baste with 1/4 cup Marsala mixture; bake an additional 1 1/2 hours or until thermometer registers 140 degrees.
  5. Baste with remaining Marsala mixture, and bake an additional 10 minutes.
  6. Remove from oven; let stand 15 minutes before slicing.
