American Loin Lamb Chops
With Toasted Sesame
And Raisin & Honey Sauce

The simmering in step 5 takes the lamb chops to medium rare, adjust accordingly. These chops are great with hot cooked couscous.


Ingredients
  • Cooking spray of your choice
  • 8 loin lamb chops, about 4 ounces each, trimmed
  • 1/2 teaspoon salt, divided
  • 1/3 cup diced shallots
  • cup fat-free, less sodium chicken broth
  • 1/3 cup golden raisins
  • tablespoons honey
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon ground cinnamon
  • tablespoon sesame seeds, toasted

Directions
 
  1. Heat a large skillet coated with cooking spray over medium-high heat.
  2. Sprinkle the lamb evenly with 1/4 teaspoon salt.
  3.  Add lamb to pan and cook 5 minutes on each side. Remove lamb from pan.
  4. Recoat pan with cooking spray. Add 1/4 teaspoon salt and shallots and sauté for 1 minute. Stir in broth, raisins, honey, cumin, and cinnamon.
  5. Add lamb, turning to coat. Simmer 3 minutes or until desired degree of doneness.
  6. Sprinkle with sesame seeds.
