Chicken Thighs With Tomatoes, Olives, And Capers

This dish is quick & easy for any hurried night and goes great with egg noodles or rice.

Ingredients
  • 8 skinless, boneless chicken thighs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon vegetable oil
  • 1 tablespoon bottled minced garlic
  • 1 cup chopped fresh parsley
  • 1/4 cup chopped pitted kalamata olives
  • 2 teaspoons capers
  • 1 can 14.5 ounce no-salt-added style diced tomatoes, undrained

Directions

  1. Sprinkle chicken with salt and pepper.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 4 minutes on each side. Remove chicken from pan; keep warm.
  3. Add garlic to pan; and sauté for 30 seconds.
  4. Add remaining ingredients; scrape pan to loosen browned bits.
  5. Return chicken and accumulated juice to pan; reduce heat, and simmer 5 minutes or until chicken is done.
