Weekday, Quick & Easy Chicken Thighs With Tomatoes, Olives, And Capers
This dish is quick & easy for any hurried night and goes great with egg noodles or rice.
Ingredients
- 8 skinless, boneless chicken thighs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon vegetable oil
- 1 tablespoon bottled minced garlic
- 1 cup chopped fresh parsley
- 1/4 cup chopped pitted kalamata olives
- 2 teaspoons capers
- 1 can 14.5 ounce no-salt-added style diced tomatoes, undrained
Directions

- Sprinkle chicken with salt and pepper.
- Heat oil in a large nonstick skillet over medium-high heat.
Add chicken; cook 4 minutes on each side. Remove chicken from pan; keep warm.
- Add garlic to pan; and sauté for 30 seconds.
- Add remaining ingredients; scrape pan to loosen browned bits.
- Return chicken and accumulated juice to pan; reduce heat, and simmer 5 minutes or until chicken is done.
