Murray's "Roasted To Perfection"
Traditional Turkey

Ingredients
  • 1 14 lbs Murray’s Whole Fresh Turkey
  • 1 cup of carrots, coarsely chopped
  • 1 stalk of celery, coarsely chopped
  • 1 bunch of parsley
  • 1 large onion, cut into wedges
  • ½ lemon
  • ½ cup of butter, melted
  • Kosher salt and fresh ground black pepper to taste

Directions

  1. Preheat the oven to 400 degrees.
  2. Wash out turkey with water and pat dry. Rub the inside of the cavity with a half a lemon, then rub generously with kosher salt.
  3. Stuff cavity with the carrot, celery, onion and parsley. Close up cavity with kitchen string. Rub the melted butter over the turkey. Season generously with kosher salt and fresh ground black pepper.
  4. Transfer turkey to a rack over a large roasting pan with the breast facing down. Roast turkey for 45 minutes, or until browned. Add a cup of water to the pan. Cover turkey loosely with foil.
  5. Roast for another 3 to 4 hours at 350 degrees until done. Murray’s recommends the use of a meat thermometer: Internal temperature of the breast should be 160 degrees, 170 degrees for the thighs.
  6. Transfer turkey to platter and leave covered with foil for 15 minutes.
  7. Turn turkey breast-side up for carving. Dispose of vegetables.
