Hunters Chicken
Ingredients
1 (9-ounce) package Buitoni/ Contadina Fresh refrigerated linguine pasta, uncooked
12 chicken breast tenders, about 16 ounces
2 tablespoons Italian seasoned breadcrumbs of your choice
1 tablespoon olive oil of your choice
2 tablespoons chopped Spanish-pimento stuffed olives
½ teaspoon dried McCormick or other Italian seasoning
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 cans 14.5 ounce your choice Italian style stewed tomatoes, undrained
1/4 cup shredded part skim mozzarella cheese


Directions
 
1. Cook pasta according to package instructions. Drain well and keep warm.
2. While pasta is cooling, dredge chicken in breadcrumbs. Heat the oil in a large skillet over medium-high heat, add chicken. Cook 3 minutes on each side until browned.
3. Stir in olives and next 4 ingredients (olives through tomatoes).
4. Cook 5 minutes or until chicken is done.
5. Serve over linguine, and top with cheese.
