Chicken With Chili Pepper Tomato Sauce and Ziti
Ingredients
  • 8 ounces uncooked Barilla ziti (aisle # 7)
  • 2 teaspoons olive oil (aisle # 8)
  • 3/4 pound skinless, boneless chicken breast, cut into bite-size pieces
    (service meat department)
  • 2 cups chopped onion (produce department)
  • 2 teaspoons bottled minced garlic (produce department)
  • 2 cups green bell pepper strips (produce department)
  • 1 (8-ounce) package pre-sliced mushrooms (produce department)
  • 1 cup canned crushed Progresso tomatoes, undrained (aisle # 7)
  • ½ cup fat-free, less-sodium College Inn chicken broth (aisle # 6)
  • ½ teaspoon salt (aisle # 8)
  • 1 can Casa Fiesta chopped/diced green chiles, minced about 2 tablespoons (aisle # 8)

    Directions
     
  • Cook pasta according to package directions, omitting salt and fat.
  • While pasta cooks, heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 3 minutes or until lightly browned. Add onion and garlic, cook 2 minutes. Add bell pepper and mushrooms, cook 5 minutes or until tender. Stir in remaining ingredients; cook 6 minutes or until thoroughly heated.
  • Serve over pasta.
