Raspberry Balsamic Glazed Chicken


Ingredients
  • 1 teaspoon vegetable oil
  • Cooking spray of your choice
  • 1/2 chopped red onion
  • 1 1/2 teaspoons minced fresh thyme
  • 1/2 teaspoon salt
  • 4 boneless chicken breasts halved, about 4 ounces each
  • 1/3 cup seedless Trappist raspberry preserves
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon fresh ground black pepper


Directions
 
  1. Heat oil in a large non stick skillet coated with cooking spray over medium-high heat until hot.
  2. Add onion and saute 5 minutes. Combine thyme and 1/4 teaspoon salt; sprinkle over chicken and add chicken to skillet; saute for approximately 6 minutes on each side or until done.
  3. Remove chicken from skillet and put aside but keep warm.
  4. Reduce heat to medium-low. Add remaining 1/4 teaspoon slat, preserves, vinegar and pepper; stirring constantly until the preserves melt.
  5. Spoon raspberry sauce over chicken.
  6. Make it easy on yourself and for a quick side dish serve with Green Giant frozen Harvest Fresh or Butter Sauce broccoli and Green Giant rice pilaf.
