Chicken Breast Tenders With Smoky Black Bean Sauce
Serve with black beans and tortilla chips.
Ingredients
- 1/4 cup fat-free, less-sodium College Inn chicken broth (aisle # 6)
- 2 teaspoons McCormick onion powder (spice section aisle # 8)
- 1 teaspoon bottled minced garlic (produce department)
- ½ teaspoon McCormick chili powder (spice section aisle # 8)
- ½ teaspoon white wine vinegar (aisle # 6)
- 1/8 teaspoon salt (aisle # 6)
- dash of McCormick ground red pepper (spice section aisle # 8)
- 1 19 ounce can Progresso black beans, rinsed and drained (aisle # 7)
- 1 can - 14.5 oz can Delmonte plain diced tomatoes (aisle # 7)
- ½ teaspoon Hickory Liquid Smoke flavoring (gravy rack aisle # 7)
- 2 tablespoons IGA butter (dairy department)
- Cooking spray of your choice (aisle # 6)
- 16 ounces raw uncooked boneless chicken breast tender pieces (service meat & seafood department)
Directions

- Combine first 9 ingredients in a small saucepan and bring to a boil. Reduce heat, and simmer 8 minutes.
- Stir in smoked seasoning; cook for 2 minutes. Remove from heat and stir in butter.
- While sauce cooks, heat a large nonstick skillet over medium-high heat. Sprinkle turkey with 1/8 teaspoon salt. Coat pan with cooking spray. Add turkey to pan; cook 2 minutes on each side or until done.
- Serve with sauce.
