Chicken Parmesan With Pasta & Broccoli
Ingredients
  • 4 boneless, skinless chicken breasts , about 6 ounces each (service meat & seafood department)
  • 1/2 lb broccoli florets - 2 cups (produce department)
  • 1 cup uncooked Barilla penne pasta (aisle # 7)
  • 1 Tbsp olive oil (aisle # 6)
  • 1 Tbsp IGA butter (dairy aisle)
  • 1 tsp Polaner "recipe readY" crushed garlic (produce department)
  • 2 Tbsp olive oil (aisle # 6)
  • 1/4 cup white flour (aisle # 8)
  • 1 cup Capri Di Roma gourmet marinara pasta sauce(aisle # 7)
  • 1/2 cup shredded mozzarella cheese (dairy aisle)

Directions
  1. Preheat oven to 350 degrees.
  2. Place one or two chicken breasts, side-by-side, smooth-side up, in gallon-size heavy-duty re sealable plastic food storage bag. Close bag; place on cutting board. Pound gently with meat tenderizer mallet, starting at center and working toward edges, until evenly flattened. Turn; pound second sides, flattening to approximately 1/4 inch. Repeat with remaining chicken. Refrigerate until ready to use.
  3. Bring large pot of salted water to boiling on HIGH. Add broccoli, return to boil, and boil 2-3 min. Remove broccoli with slotted spoon and set aside. Return water to boil; add pasta and cook according to package directions. Drain and set aside.
  4. Combine 1 Tbs olive oil and butter in medium saucepan. Heat on LOW to melt butter. Add garlic; cook 1 min, stirring. Add broccoli and pasta; keep warm while preparing chicken.
  5. Heat 2 Tbs olive oil in large skillet on MEDIUM-HIGH, until oil faintly smokes. Dust chicken with pan searing flour; pat off excess. Add chicken to skillet. Turn when caramelized or when edges turn brown about one-quarter of the way up sides, 3-4 min. Remove from skillet; blot excess oil from chicken with paper towel.
  6. Arrange chicken in shallow baking pan. Drizzle with marinara sauce and sprinkle with shredded mozzarella. Bake 10 min, until cheese melts and sauce is hot. Serve with broccoli and pasta.
