Chicken And Strawberries
Over Mixed Garden Greens

Ingredients
  • 2 cups chopped roasted or gilled skinless, boneless chicken breasts, about whole 2 breasts.
  • 2 cups quartered, cut (not too large) fresh strawberries, about 1 pint.
  • 1/3 cup finely chopped celery.
  • 1/3 cup finely chopped Bermuda red onion.
  • 2 tablespoons golden raisins.
  • 1 tablespoon sesame seeds, toasted.
  • 1 tablespoon chopped fresh or 1 teaspoon dried McCormick tarragon.
  • 1 tablespoon extra-virgin olive oil.
  • 1 tablespoon balsamic vinegar.
  • 1/2 teaspoon McCromick paprika.
  • 1/8 teaspoon salt.
  • 1/8 teaspoon black pepper.
  • 4 cups Dole spring mix style salad greens.

Directions

  1. Combine first 5 ingredients in a large bowl.
  2. Combine sesame seeds and next six ingredients, sesame seeds through pepper into a small bowl, stirring well with a whisk.
  3. Pour over chicken mixture; toss well to coat. Cover and chill 1 hour. Serve over salad greens.
