Blackened Catfish
Ingredients
- 1 tablespoons paprika (spice rack end of aisle # 8)
- 1 tablespoon dried oregano (spice rack end of aisle # 8)
- ½ teaspoon salt (aisle # 8)
- freshly ground black pepper (spice rack end of aisle # 8)
- 1/4 teaspoon ground red pepper (spice rack end of aisle # 8)
- 4 (6-ounce) farm-raised catfish fillets (seafood department)
- 2 teaspoons Colavita olive oil (aisle # 8)
Directions

- Combine first 5 ingredients in a small bowl. Sprinkle both sides of fish with thepaprika mixture.
- Heat oil in a large cast-iron skillet over high heat. Add fish; cook 4 minutes on each side or until fish flakes easily with a fork.
