Blackened Catfish
Ingredients
  • 1 tablespoons paprika (spice rack end of aisle # 8)
  • 1 tablespoon dried oregano (spice rack end of aisle # 8)
  • ½ teaspoon salt (aisle # 8)
  • freshly ground black pepper (spice rack end of aisle # 8)
  • 1/4 teaspoon ground red pepper (spice rack end of aisle # 8)
  • 4 (6-ounce) farm-raised catfish fillets (seafood department)
  • 2 teaspoons Colavita olive oil (aisle # 8)


Directions
 
  1. Combine first 5 ingredients in a small bowl. Sprinkle both sides of fish with thepaprika mixture.
  2. Heat oil in a large cast-iron skillet over high heat. Add fish; cook 4 minutes on each side or until fish flakes easily with a fork.
