Salmon Pizzaiola
Ingredients
2 tablespoons Extra Virgin Olive Oil (aisle # 11)
1 1/2 pounds salmon fillets (service seafood department)
1 medium green pepper, sliced 1/4 inch thick (produce department)
1 medium Spanish onion, sliced 1/4 inch thick (produce department)
4 medium white mushrooms, sliced 1/4 inch thick (produce department)
1 can (28 ounces) Progresso Italian Style Tomatoes, cut up into cubed pieces (aisle #7)
1/2 cup shredded Asiago cheese (dairy department)
Salt and pepper to taste (aisle #11)


Directions
 
1. Heat oil in large skillet over Medium-High heat.
2. Salt and pepper salmon; place meat-side down in skillet.
3. Add vegetables and sauté 3 to 5 minutes, turning vegetables frequently.
4. Turn fish and add tomatoes. Simmer 3 to 6 minutes longer until fish is just opaque. Do not overcook.
5. Sprinkle with cheese and serve.
