Oven Poached Salmon In Garlic Broth
Ingredients
2 tablespoons lemon juice (aisle #2)
5 garlic cloves, minced (produce department)
2 bottles of 8 ounce clam juice (aisle #2)
1 16 ounce bag of Dole Cole Slaw (produce department)
4 salmon fillets, approximately 6 ounces each, skinned (service seafood department)
1/4 cup fresh cilantro of Italian-curly parsley (produce department)
1/8 teaspoon black pepper (aisle #11)
Directions

1. Preheat oven to 375 degrees.
2. Combine first 3 ingredients in a small saucepan; bring to a boil. Reduce heat; simmer 5 minutes.
3. Place coleslaw in a 11 by 7 inch baking dish; arrange fish on top of coleslaw. Pour juice mixture over fish, sprinkle with cilantro and pepper.
4. Bake at 375 degrees for 12 minutes or until fish flakes easily when tested with a fork.
5. Serve with your choice of our Chabaso crusty french bread.
