Maple Glazed
Roasted Salmon


Ingredients
  • 1/4 cup grated fresh ginger
  • 1/4 cup plain rice vinegar or white wine vinegar
  • 1/4 cup maple syrup
  • 2.5 pounds salmon fillet
  • 6 shallots, halved lengthwise
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon maple syrup, divided
  • chopped fresh parsley, optional

    Directions
     
    1. Combine first three ingredients in bottom of a large platter. Add fish, skin side up, to ginger mixture. Cover and marinate in refrigerator for 20 minutes. Remove fish form marinade; pat dry to remove excess marinade.
    2. Preheat oven to 450 degrees.
    3. Place a baking sheet in oven of 5 minutes. Place shallots and fish, skin side down, on baking sheet; sprinkle with salt and pepper.
    4. Brush fish with 1 tablespoon of maple syrup. Bake at 450 degrees for 10 minutes.
    5. Brush again with 1 tablespoon of maple syrup, bake an additional 7 minutes or until fish flakes easily when tested with a fork.
    6. Sprinkle with parsley for a garnish if desired and serve.
