Maple Glazed Roasted Salmon
Ingredients
1/4 cup grated fresh ginger (produce department)
1/4 cup plain rice vinegar or white wine vinegar(aisle # 8 or # 6) 1/4 cup maple syrup (aisle # 11)
1 (2.5 lb.) salmon fillet (service seafood)
6 shallots, halved lengthwise (produce department)
1/2 teaspoon salt (aisle # 11)
1/4 teaspoon black pepper (spice rack end of aisle # 11)
2 tablespoon maple syrup, divided (aisle # 11)
chopped fresh parsley, optional (produce department)
Directions

1. Combine first three ingredients in bottom of a large platter. Add fish, skin side up, to ginger mixture. Cover and marinate in refrigerator for 20 minutes. Remove fish form marinade; pat dry to remove excess marinade.
2. Preheat oven to 450 degrees.
3. Place a baking sheet in oven of 5 minutes. Place shallots and fish, skin side down, on baking sheet; sprinkle with salt and pepper. Brush fish with 1 tablespoon of maple syrup. Bake at 450 degrees for 10 minutes.
4. Brush again with 1 tablespoon of maple syrup, bake an additional 7 minutes or until fish flakes easily when tested with a fork. Sprinkle with parsley for a garnish if desired.
