Salmon Florentine
Ingredients
1 tablespoon Italian Classics Extra Virgin Olive Oil (aisle #11)
2 shallots, finely chopped (produce department)
1/2 cup half & half cream (diayr department)
3/4 cup crumbled feta cheese
(dairy department)
1 package (10 ounces) spinach, rinsed, trimmed and coarsely chopped (produce department)
1 pound skinned salmon fillets (service seafood department)


Directions
 
1. Preheat oven to 425°.
2. Heat oil in a small saucepan. Add shallots and cook, covered, on low until shallots are soft, about 5 minutes.
3. Add cream and bring to a boil. Reduce heat and simmer on low for 5 minutes, until slightly thickened.
4. Add cheese and stir constantly until cheese is melted and sauce is smooth. Remove from heat and cover.
5. Microwave spinach in an oven proof casserole, covered, with only the water that clings to the rinsed leaves, about 4 minutes, until just wilted. Press gently with a fork and drain off excess water. Salt and pepper to taste.

6. Place the salmon over the spinach and pour the cheese sauce on top. Bake, uncovered, for 20 minutes.
