Grilled Salmon With Spinach, Mushrooms And Capers
Ingredients
- 1 1/2 pounds Foley fresh salmon fillets
- 1 clove garlic, minced or 1/2 teaspoon jarred minced garlic
- 1 jar 3.5 ounces, capers, drained
- Juice of 1 lemon
- Black pepper
- 1 jar 10 ounces, marinated mushrooms, drained, 2 tablespoons of oil reserved
- 1 bag 10 ounces, pre-washed fresh spinach, trimmed
- Salt
Directions

- Preheat a well-oiled grill to high.
- Grill fillets 3 to 6 minutes per side or to desired doneness, turning once.
- Place 2 tablespoons oil (from mushrooms) in a large skillet over medium-high heat.
- Add spinach and garlic; sauté until spinach wilts. Add mushrooms, capers and lemon juice;
set aside.
- Serve salmon fillets over bed of spinach mixture
