Grilled Salmon With Spinach, Mushrooms And Capers


Ingredients
  • 1 1/2 pounds Foley fresh salmon fillets
  • 1 clove garlic, minced or 1/2 teaspoon jarred minced garlic
  • 1 jar 3.5 ounces, capers, drained
  • Juice of 1 lemon
  • Black pepper
  • 1 jar 10 ounces, marinated mushrooms, drained, 2 tablespoons of oil reserved
  • 1 bag 10 ounces, pre-washed fresh spinach, trimmed
  • Salt


Directions
 
  1. Preheat a well-oiled grill to high.
  2. Grill fillets 3 to 6 minutes per side or to desired doneness, turning once.
  3. Place 2 tablespoons oil (from mushrooms) in a large skillet over medium-high heat.
  4. Add spinach and garlic; sauté until spinach wilts. Add mushrooms, capers and lemon juice; set aside.
  5. Serve salmon fillets over bed of spinach mixture
