Grilled Salmon Salad With Raspberry Vinaigrette
Ingredients
1 pound Foley fresh salmon fillets (service seafood department)
1 bunch fresh arugula or fresh basil (produce department)
1 pound cherry tomatoes, halves (produce department)
1 head red leaf lettuce, cleaned and chopped (produce department)
1 small red onion, thinly sliced (produce department)
1 jar Scalfani marinated mushrooms, 10 ounces, drained (aisle # 6)
1/3 cup Vermont Maple Grove Farms Raspberry Vinaigrette
salad dressing (aisle # 1)
Pepper and salt to taste (aisle # 11)
Directions

1. Preheat grill to High
2. Sprinkle salmon with salt and pepper. Grill salmon on high 4 to 6 minutes per side or until cooked through.
3. Toss together remaining ingredients.
4. Serve grilled salmon over a bed of salad.
