Easy Pesto Salmon
Ingredients
  • 2 cups fresh spinach leaves (produce department)
  • ½ cup basil leaves (produce department)
  • 1/4 cup fat-free, less-sodium College Inn chicken broth (aisle # 6)
  • 1 tablespoon Colavita olive oil (aisle # 8)
  • 1/4 teaspoon salt (aisle # 8)
  • 3 garlic cloves, peeled (produce department)
  • Cooking spray of your choice (aisle # 8)
  • 2 Foley "skinless & boneless" salmon fillets, about 6 ounces (service seafood department)
  • 2/3 cup hot cooked brown rice (aisle # 7)


Directions
 
  1. Preheat oven to 400 degrees.
  2. Place the first 6 ingredients in a food processor or blender, and process until smooth.
  3. Spoon 3 tablespoons pesto mixture into bottom of an 8-inch square baking dish coated with cooking spray.
  4. Top with the salmon fillets, and spread with the remaining pesto mixture.
  5. Make brown rice according to package directions.
  6. Bake at 400 degrees for 20 minutes or until flakes easily when tested with a fork.
  7. Serve with rice.

Servings
Serves 2, each serving is 1 salmon fillet and 1/3 cup rice .
