Baked Haddock or Cod Fillets
Ingredients
1 ½ pounds "Foley" fresh haddock or cod fish fillets (service seafood department)
Cooking spray of your choice (aisle #11)
1 tablespoon lime juice
(limes in our produce department or lime juice in aisle #3)
1 tablespoon Hellmann's light mayonnaise(aisle # 6)
1/8 teaspoon onion powder (spice rack end of aisle # 11)
1/8 teaspoon black pepper (spice rack end of aisle # 11)
½ cup seasoned breadcrumbs (aisle # 12)
1 ½ tablespoons IGA butter or stick margarine, melted (dairy department)
2 tablespoons chopped fresh parsley (produce department)


Directions
 
1. Preheat oven to 425 degrees.
2. Place fish in an 11 x 7-inch baking dish coated with cooking spray. Combine lime juice, mayonnaise, onion, powder, and pepper in a small bowl, and spread over fish. Sprinkle with breadcrumbs; drizzle with butter. Bake at 425 for 20 minutes or until fish flakes easily when tested with a fork.
3. Sprinkle with parsley.
