Mediterranean Shrimp With Pasta And Capers
Ingredients
1 tablespoon olive oil (aisle # 11)
¾ cup ½ inch sliced green onions, scallions (produce department)
4 garlic cloves, minced (produce department)
6 cups chopped tomato, about 2 pounds (produce department)
1 tablespoon tomato paste (aisle # 7)
1 tablespoon Laurel Hill capers (aisle # 6)
½ teaspoon salt (aisle # 11)
1 pound large shrimp, peeled and deveined (service seafood department)
2 tablespoons chopped fresh or 2 teaspoons dried oregano
(produce department or spice rack end of aisle # 11)
5 cups hot cooked Barilla angel hair pasta, about 10 ounces uncooked pasta (aisle # 7)
5 tablespoons, 1 ¼ ounces finely crumbled feta cheese (dairy department)
¼ teaspoon freshly ground black pepper (spice rack end of aisle # 11)


Directions
 
1. Prepare pasta according to package instructions and have ready for remainder of ingredients.
2. Heat oil in a large non stick skillet over medium-high heat. Add onions and garlic, and saute 2 minutes. Add tomato, and cook over medium heat 7 minutes. Add tomato paste, stirring well to combine. Add capers and salt; cook 15 minutes or until mixture begins to thicken.
3. Stir in shrimp and oregano; cook 3 minutes or until shrimp are done. Combine shrimp mixture and pasta in a large bowl, tossing gently. Sprinkle with cheese and pepper.
