Baked Shrimp With Feta Cheese
Ingredients
    1 teaspoon Colavita olive oil (aisle # 8)
    3/4 teaspoon dried oregano (spice rack end of aisle # 8)
    ½ teaspoon salt (aisle # 8)
    1/4 teaspoon crushed red pepper (spice rack end of aisle # 8
    ) 16 oz. medium fully cooked peeled and deveined shrimp (service seafood department)
    3 garlic cloves, minced (produce department)
    Cooking spray of your choice (aisle # 8)
    ½ cup dry white cooking wine (aisle # 1)
    3 cups diced, about 3/4 pound plum tomato (produce department)

    3/4 cup, 3 ounces finely crumbled feta cheese (food court olive bar or dairy department)

    4 cups hot cooked Ronzoni linguine, about 8 ounces uncooked (aisle # 8)

    1'/4 cup minced fresh parsley (produce department)



Directions
 
    1. Preheat oven to 350 degrees.

    2. Heat oil in a large nonstick skillet over medium-high heat. Add the oregano and the next 4 ingredients, oregano through garlic, saute for 3 minutes. Spoon the shrimp mixture into an 11 x 7-inch baking dish coated with cooking spray.

    3. Add wine to skillet; cook over low heat until reduced, to 1/4 cup, about 3 minutes. Stir in tomato, and pour over the shrimp mixture.

    4. Sprinkle with cheese, and bake at 350 degrees for 10 minutes. Serve mixture over pasta, and sprinkle with parsley.

Serves 4, serving size 1 cup pasta, 1 cup shrimp mixture and 1 tablespoon of parsley.
