Pan Seared Tilapia
With Sauteed Green Beans And Grape Tomatoes

Ingredients
  • 1/4 lb trimmed green beans (produce department)
  • 4 (5-6 oz each) Foley Fish tilapia fillets (service seafood department)
  • 2 Tbsp olive oil (aisle # 6)
  • 2 Tbsp butter (dairy department)
  • 2 tsp shallots, chopped (produce department)
  • 2 tsp thyme, chopped (produce department)
  • 1 pkg (10 oz) grape tomatoes, halved (produce department)


Directions
 
  1. Bring pot of salted water to a boil, blanch green beans 1-2 min, drain and set aside.
  2. Heat oil in skillet on MEDIUM-HIGH, until faintly smoking.
  3. Place tilapia carefully into pan, brown lightly on both sides, 1-2 min each side. Reduce heat to MEDIUM and continue to cook until internal temperature reaches 130 degrees, 3-5 min, check temperature by inserting thermometer into thickest part of fish.
  4. Add butter, shallots and thyme to pan. Melt and blend but do not burn butter; baste tilapia and continue cooking until internal temperature reaches 135 degrees, 2-3 more min.
  5. Remove tilapia from pan; let rest until internal temperature reaches target temp of 140 degrees. Add green beans and tomatoes to pan and saute for 30 more seconds; serve over tilapia.
