Pecan Encrusted Fresh Haddock Fillets


Ingredients
  • 1/2 cup Progresso unseasoned bread crumbs
  • 2 oz pecans, finely chopped, about 1/2 cup.
  • Salt
  • Pepper
  • 3 Tbsp extra virgin olive oli
  • 4 haddock fillets, about 6 ounces each
  • Cooking spray of your choice


Directions
 
  • Preheat oven to 450 degrees.
  • Coat medium baking sheet with cooking spray.
  • Mix bread crumbs and pecans in medium bowl. Season to taste with salt and pepper.
  • Drizzle each side of fish with extra virgin olive oil and sprinkle with bread crumb mixture. Transfer to baking sheet.
  • Bake 12-15 min, until golden-brown, and internal temperature reaches 130 degrees. Check by inserting thermometer halfway into thickest part of fillet. Let rest at least 2 min.
