Grilled Tuna Steaks
With Onion & White Bean Salad

Ingredients


Tuna:
  • 1 tablespoon grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 1 minced garlic clove
  • 4 six ounce fresh tuna steaks
  • Cooking spray of your choice
Salad:
  • 1 medium size Vidalia onion cut into 1/4 inch thick slices
  • 3 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon Dijon mustard
  • 1 minced garlic clove
  • 1/2 cup chopped, seeded & peeled cucumber
  • 1 tablespoon capers
  • 1 19 oz can cannellini white beans
  • 6 cups fresh mixed garden greens - spring mix


Directions
 
  1. Prepare grill
  2. To prepare tuna combine the first 6 ingredients in a large zip-top plastic bag and add the tuna. Seal bag and marinate under refrigeration for 30 minutes.
  3. Remove tuna from bag and discard marinade. Place tuna on grill rack coated with cooking spray and grill each side for 2 minutes or until desired degree of doneness.
  4. To prepare salad place onion slices on grill rack coated with cooking spray and grill 5 minutes on each side or until desired degree of doneness.
  5. Cool and chop onions.
  6. Combine vinegar and next 5 ingredients, through garlic, into a large bowl. Stir with whisk until thoroughly blended.
  7. Add onion, cucumber, parsley, capers and beans to vinegar mixture. Toss to coat salad greens.
  8. Arrange 1 1/2 cups of salad greens on each of 4 plates. Top with 1/2 cup onion mixture and 1 tuna steak.
