Halibut With Cannellini Beans
In Tomato & Rosemary Broth
Ingredients:
- 1 tablespoon olive oil
- 4 halibut fillets, about 6 ounces each
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 garlic cloves minced
- 2 cups chopped plum tomatoes, about 4
- 1 1/2 cups fat-free, less sodium chicken broth
- 1/2 cup dry white cooking wine
- 1 19 oz can cannellini beans, drained
- 1/2 teaspoon chopped fresh rosemary
Directions

- Heat oil in a large non-stick skillet over medium high heat. Sprinkle fish
evenly with salt & pepper.
- Add fish to pan and cook 5 minutes on each side or until fish flakes easily
with fork.
- Remove fish from pan and keep warm. Add garlic to same pan and cook 30
seconds, stirring constantly. Add and stir in tomato, broth, wine and beans:
bring to a boil.
- Reduce heat and simmer for 5 minutes. Remove from heat and stir in chopped
rosemary herb.
- Serve immediately
