Halibut With Cannellini Beans
In Tomato & Rosemary Broth


Ingredients:
  • 1 tablespoon olive oil
  • 4 halibut fillets, about 6 ounces each
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 garlic cloves minced
  • 2 cups chopped plum tomatoes, about 4
  • 1 1/2 cups fat-free, less sodium chicken broth
  • 1/2 cup dry white cooking wine
  • 1 19 oz can cannellini beans, drained
  • 1/2 teaspoon chopped fresh rosemary

Directions

 
  1. Heat oil in a large non-stick skillet over medium high heat. Sprinkle fish evenly with salt & pepper.
  2. Add fish to pan and cook 5 minutes on each side or until fish flakes easily with fork.
  3. Remove fish from pan and keep warm. Add garlic to same pan and cook 30 seconds, stirring constantly. Add and stir in tomato, broth, wine and beans: bring to a boil.
  4. Reduce heat and simmer for 5 minutes. Remove from heat and stir in chopped rosemary herb.
  5. Serve immediately
