Black Bean Confetti Relish

This recipe goes with Fresh Herbed Tuna Steaks With Black Bean Confetti Relish

Ingredients
  • 2/3 cup canned black beans, rinsed and drained
  • 2 tablespoons frozen whole-kernel corn
  • 2 tablespoons diced yellow bell pepper
  • 2 tablespoons diced plum tomato
  • 1 tablespoon diced red bell pepper
  • 1 tablespoon minced shallots
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon coarsely ground black pepper
  • 1/8 teaspoon salt

Directions

  1. Combine all the ingredients in a bowl and mix.
  2. Serve relish chilled or at room temperature.
