Sweet Potato Gratin

Ingredients
  • 1 Tbsp vegetable oil for basting.
  • 2 cloves peeled garlic from our produce department, minced.
  • 3 sweet potatoes or yams (about 2 1/2 pounds), peeled and sliced 1/8 inch thick.
  • Salt and pepper.
  • 1 cup heavy cream.

Directions

  1. Preheat oven to 350 degrees.
  2. Coat bottom of 9-inch baking dish with oil and sprinkle with garlic.
  3. Cover bottom of dish with one overlapping layer of sliced sweet potatoes. Season with salt and pepper. Continue, layering all potatoes and seasoning each layer with salt and pepper.
  4. Pour heavy cream over potatoes.
  5. Bake, uncovered, 30-35 minutes, until potatoes are tender and top browned. Let sit for 5 minutes.
  6. Chef Tip: You can use white sweet potatoes if desired.
